Ingredients for 2 portions:
- 6 eggs
- 1 cup shredded sharp cheddar cheese
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 tomatoes / or 1 large cucumber / or 1 avocado
- In 2 small bowls whisp 3 eggs with salt and pepper (add 2 tsp milk optionally).
- Add shredded cheese and mix well.
- Preheat frying pan on a medium-low heat, pour olive oil. Pour eggs and cover the pan. Cook for 7-8 min until eggs start to raise.
- Serve with vegetables of your choice.
