Japanese udon noodles with chicken

Ingredients:
  • 2 large chicken fillet
  • udon noodles
  • ginger powder 1/2 tsp
  • garlic powder 1/2 tsp
  • 1/2 onion sliced
  • 1/8 medium head of cabbage shredded
  • 1 carrot cut into sticks
  • 1 cup bean sprouts
  • 4 baby bok choy cut into small pieces
  • 3-5 cut into small pieces green onions
  • roasted sesame seeds for topping
  • vegetable oil for frying
  • For seasoning:
    • 1/4 teaspoon salt
    • 1 tsp soy sauce
    • 1 tsp dark soy sauce
    • 1 tsp cooking wine
    • 1 tsp oyster sauce
Instructions:
  • Cook udon noodles according to the instructions on the package.
  • Cut chicken fillet into small pieces, add 2 tsp of soy sauce and fry until ready.
  • Heat oil in a pan over the medium heat, add ginger and garlic.
  • Add onion and stir-fry for 5 minutes until onion turns soft.
  • Add cabbage, carrot, bok choy and bean sprouts, fry for 5 minutes or until vegetables get soft.
  • Add all the seasoning and mix until spread evenly.
  • Add chicken and green onion, mix everything.
  • Add rinsed udon noodles and make sure all ingredients are mixed well.
  • Sprinkle with roasted sesame seeds when serving.
