Almond flour pancakes with jam and greek yogurt

  • 1.5 cups almond flour
  • 3 eggs
  • 1 cup of milk
  • 1 tsp vanilla extract (optional)
  • apricot jam (or any other) and greek yogurt (or sour cream)
  • butter or oil for cooking
  • Mix all ingredients using a blender until batter is a pourable consistency.
  • Heat up a pan and add cooking butter or oil.
  • Cook all pancakes for approximately 2-3 minutes per side until both sides are golden brown.
  • Add jam and greek yogurt and serve.
