- 1.5 cups almond flour
- 3 eggs
- 1 cup of milk
- 1 tsp vanilla extract (optional)
- apricot jam (or any other) and greek yogurt (or sour cream)
- butter or oil for cooking
- Mix all ingredients using a blender until batter is a pourable consistency.
- Heat up a pan and add cooking butter or oil.
- Cook all pancakes for approximately 2-3 minutes per side until both sides are golden brown.
- Add jam and greek yogurt and serve.
